The more time we spend at home, the more we seem to be turning to baking for a wholesome pastime. Delectable homemade treats have been flooding our feeds, leaving us salivating as we scroll. From banana bread and cinnamon scrolls, to whipped coffee, iso-baking is a trend we’re more than happy to succumb to.

Ingredients

For the crust:

  • 2 ½ cups of plain flour
  • 1 ½ cups of butter (softened to room temperature)
  • A pinch of salt
  • Cold water


For the filling:

  • 2 cups of raspberries (fresh or frozen)
  • 2 cups of blueberries (fresh or frozen)
  • 2 cups of blackberries (fresh or frozen)
  • ¾ cup of caster sugar
  • A pinch of salt
  • 1 tsp lemon juice
  • 4 tbsp cornstarch
  • 1 egg

 

Method

Make the crust: 

  1. Preheat your oven to 200℃.
  2. Place flour, butter and salt into a medium bowl.
  3. Use your hands to combine ingredients until small pebbles begin to form.
  4. Add cold water as required until the dough holds together well. Don’t over handle the dough, it should remain soft.
  5. Seperate the dough into two balls, one for the base and one for the top of the pie.
  6. Place one ball of dough onto baking paper and flatten with a rolling pin. Place a second piece of baking paper over the top and roll out the dough into a circle, until it is roughly 1cm thick. Ensure the circle of dough is bigger than your pie dish.
  7. Carefully place the rolled out dough into the pie dish. Use your fingers to push the dough into the pan, crimping the edges.
  8. Place the second ball of dough into a container, and refrigerate both whilst making the pie filling.

Make the filling: 

  1. Preheat your oven to 200℃.
  2. In a medium saucepan, combine the raspberries, blueberries, blackberries, sugar, lemon juice, salt and cornstarch. Mix well to combine. Cook the filling on a medium heat, stirring until the filling thickens. Set aside to cool once you’re happy with consistency.
  3. After cooling, pour the filling into the pie dish, creating an even layer of filling.
  4. Place the second ball of dough onto baking paper and roll out into a circle, using a rolling pin. Ensure the circle of dough is large enough to cover the top of the pie dish.
  5. Place the dough on top of the pie, using your fingers to crimp the edges. Use a fork to prick the top of the pie to prevent bubbling.
  6. In a small bowl, whisk the egg. Using a brush, brush the crust with the beaten egg.
  7. Bake the pie for 50 minutes, or until the crust is golden brown.
  8. Cover the pie with icing sugar and serve with ice cream.
